Ingredients

- 2 cups all-purpose flour - 1 teaspoon baking powder - 1 teaspoon baking soda - 1/2 teaspoon salt - 1/2 cup butter, softened - 1 cup granulated sugar - 2 large eggs - 1 cup buttermilk - 1/2 cup semi-sweet chocolate chips - 1/2 cup semi-sweet chocolate, melted - 1/4 cup boiling water - 1 teaspoon vanilla extract - 1/4 cup red food coloring - 2 tablespoons white sugar

Instructions

1. Preheat oven to 350°F (176°C). Grease and flour three 8-inch round cake pans. 2. In a medium bowl, sift together the flour, baking powder, baking soda, and salt. Set aside. 3. In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. 4. Add the flour mixture and the buttermilk alternately to the creamed mixture, beginning and ending with the flour mixture. Stir in the chocolate chips. 5. Divide the batter evenly among the prepared pans. Bake in preheated oven for 20 to 25 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool in pans for 10 minutes before removing to cool completely on wire racks. 6. In a small bowl, combine the melted chocolate, boiling water, and vanilla extract. Stir until smooth. Divide the mixture into thirds and add a few drops of red food coloring to each bowl. 7. Place one cake layer on a serving plate. Spread a third of the chocolate mixture over the top. Place a second layer on top and spread with another third of the chocolate mixture. Place the final layer on top. Spread the remaining chocolate mixture over the top and sides of the cake. 8. Sprinkle the white sugar over the top of the cake. 9. Place the cake in the oven and bake for 8 to 10 minutes or until the sugar melts and starts to caramelize.
