Ingredients
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup vegan butter
- 1/2 cup granulated sugar
- 2 large ripe bananas, mashed
- 1 teaspoon vanilla extract
- 1/2 cup vegan semi-sweet chocolate chips (optional)
Instructions
Preheat the oven to 350°F. Grease and flour a 9x5-inch loaf pan.
In a medium bowl, mix together the flour, baking soda and salt. Set aside.
In a large bowl, cream together the vegan butter and sugar until light and fluffy. Beat in the mashed bananas and vanilla extract until fully combined.
Add the dry ingredients to the wet ingredients, and mix until well combined. Fold in the vegan chocolate chips, if desired.
Pour the batter into the prepared loaf pan and bake for 40-45 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
Let the banana bread cool in the pan for 10 minutes, then remove and cool completely on a wire rack.
