- 1 package refrigerated pie crusts, softened as directed on package
- 6 cups apples, peeled, cored, and sliced
- 3/4 cup sugar
- 2 tablespoons all-purpose flour
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 3 tablespoons butter
- Milk
- Sugar
Instructions
Preheat oven to 425°F. Grease a 10-inch cast-iron skillet with butter. Unroll one of the pie crusts and place it in the skillet. Press it into the bottom and up the sides. Trim off any extra crust.
In a large bowl, combine the apples, 3/4 cup sugar, flour, cinnamon, nutmeg, and salt. Mix until the apples are evenly coated. Pour the apples into the prepared skillet.
Dot the butter over the top of the apples. Unroll the other pie crust and place it over the top. Trim and crimp the edges. Cut several slits in the top of the crust to allow steam to escape. Brush the crust with milk and sprinkle with sugar.
Bake for 30 minutes, or until crust is golden brown and apples are tender. Let cool for at least 10 minutes before serving.

Tips and Variations
You can use any type of apple for this recipe, but Granny Smith apples work best. This recipe calls for two packages of refrigerated pie crust, but you can also use a homemade crust if desired. For a twist, try adding a layer of crumbled oatmeal cookie or graham cracker crumbs to the bottom of the crust before adding the apples. You can also top the pie with streusel instead of the sugar and milk mixture.
For a lower calorie version, you can reduce the amount of butter used, or substitute it with a low-fat margarine. You can also reduce the amount of sugar used. For a vegan version, substitute the butter with a vegan margarine and use a vegan pie crust.
If you want to change up the flavour of the pie, try adding a teaspoon of vanilla or almond extract to the apples. You can also add a tablespoon of lemon juice or a few tablespoons of orange juice. You can also top the pie with a layer of crushed nuts or a sprinkle of shredded coconut.
