Ingredients
For the pop tarts, you will need:
- 1 cup all-purpose flour
- 2 tablespoons cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3/4 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 large egg
- 2 tablespoons sour cream
- 1 teaspoon vanilla extract
- 1 teaspoon red food coloring
- 1/4 cup butter, softened
- 2 tablespoons heavy cream
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/4 cup finely chopped nuts
- 1/4 cup mini semi-sweet chocolate chips
- 1/2 cup butter, softened
- 2 cups confectioners’ sugar
- 1 teaspoon vanilla extract
- 2 tablespoons heavy cream
- 1/4 cup mini semi-sweet chocolate chips
Instructions
To make the pop tart crust, preheat your oven to 350 degrees Fahrenheit. In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt. In a separate bowl, cream together the butter and sugar until light and fluffy. Beat in the egg, sour cream, vanilla extract, and red food coloring. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
Divide the dough in half and roll each piece out on a lightly floured surface until it is 1/8-inch thick. Cut out circles of dough with a 2-3 inch biscuit cutter or a large round cookie cutter. Place the circles on a parchment lined baking sheet and bake for 10-12 minutes, or until the edges are lightly browned. Allow the circles to cool completely before proceeding.
To make the filling, cream together the butter, heavy cream, sugar, and vanilla extract until light and fluffy. Stir in the nuts and mini chocolate chips. Place a heaping tablespoon of the filling on one side of the cooled circle. Place the other circle on top and use a fork to crimp the edges together. Place the pop tarts on a parchment lined baking sheet and bake for 15-20 minutes, or until the edges are golden brown. Allow to cool before icing.
To make the frosting, cream together the butter and confectioners’ sugar until light and fluffy. Beat in the vanilla extract and heavy cream until smooth. Spread the frosting on top of the cooled pop tarts and sprinkle with mini chocolate chips. Enjoy!
