Instructions

Making the Cake

1. Preheat oven to 350 degrees F. Grease and flour two 9-inch round cake pans.

2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda and salt. Set aside.

3. In a large bowl, beat together the butter and sugar until light and fluffy. Add the eggs one at a time, beating after each addition. Add the vanilla extract and red food coloring and beat until combined.

4. Add the dry ingredients in three additions, alternating with the buttermilk and beginning and ending with the dry ingredients. Beat until just combined.

5. Divide the batter evenly between the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean. Let cool in the pans for 10 minutes, then turn out onto a wire rack to cool completely.

6. While the cakes are cooling, make the frosting. In a large bowl, beat together the cream cheese and butter until smooth. Add the confectioners’ sugar, vanilla extract and salt and beat until light and fluffy.

7. To assemble the cake, place one layer on a cake stand or plate. Spread with a generous amount of frosting. Place the second layer on top and spread with remaining frosting. Decorate with holiday sprinkles or edible glitter, if desired.
