To make this delicious mint chocolate cake, you’ll need the following ingredients:- 2 1/2 cups all-purpose flour
- 3/4 cup cocoa powder
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened to room temperature
- 2 cups granulated sugar
- 4 large eggs, at room temperature
- 1 cup full-fat sour cream
- 1 teaspoon pure vanilla extract
- 1/2 teaspoon pure peppermint extract
- 1/2 cup semi-sweet chocolate chips
Instructions
Now that you have all of your ingredients, let’s get started on this mint chocolate cake.- Preheat oven to 350°F (177°C). Grease two 9-inch round cake pans, line with parchment paper, and grease the parchment paper.
- In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
- In a large bowl, beat the butter and sugar until light and fluffy, about 2 minutes. Add the eggs one at a time, beating until combined. Scrape down the sides of the bowl as needed.
- Add the sour cream, vanilla extract, and peppermint extract and beat until combined.
- Add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.
- Fold in the chocolate chips.
- Divide the batter evenly between the two prepared pans.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cakes cool for 10 minutes in the pans, then remove and let cool completely on a wire rack.
