- 1 cup all-purpose flour

- 1 cup milk
- 2 tablespoons melted butter
- 1 egg yolk
- 2 egg whites
- Butter or oil, for greasing the skillet
Instructions
- In a medium bowl, whisk together the flour, baking powder, sugar, and salt.
- In a separate bowl, whisk together the milk, melted butter, and egg yolk.
- Add the wet ingredients to the dry ingredients and stir until combined.
- In a separate bowl, whisk the egg whites until stiff peaks form.
- Gently fold the egg whites into the batter.
- Heat a skillet or griddle over medium heat and grease it with butter or oil.
- Drop 1/4 cup of the batter onto the skillet and cook for 2-3 minutes, until the edges are golden and the center is cooked through.
- Flip the pancake and cook for another 1-2 minutes, until both sides are golden brown.
- Repeat with the remaining batter.
- Serve warm with your favorite toppings.
