Ingredients
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 tablespoon sugar
- 1 cup milk
- 2 tablespoons vegetable oil
- 1 egg
- Butter or cooking spray
Instructions
Begin by preheating your cast iron skillet to medium heat for about 5 minutes. Make sure the skillet is completely dry before you begin. This will help the pancakes cook evenly and get that extra crunch you’re looking for.
In a large bowl, mix together the flour, baking powder, salt, and sugar. In a separate bowl, mix together the milk, vegetable oil, and egg. Gradually add the wet ingredients to the dry ingredients and mix until the batter is smooth and lump free.
Once the skillet is hot, melt a teaspoon of butter or spray the skillet with cooking spray. Pour 1/4 cup of batter onto the skillet and spread it out evenly. Let the pancake cook on one side until it starts to bubble, then flip it over with a spatula and let the other side cook until it’s golden brown.
When the pancake is finished cooking, remove it from the skillet and repeat the process until all the batter is gone. Serve the pancakes with your favorite toppings and enjoy!
