Ingredients
This recipe requires the following ingredients:- 3 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup Ocean Spray® Cranberry Apple Juice
- 1/2 cup melted butter
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 2 eggs, lightly beaten
- 1/2 cup chopped fresh cranberries
- 1/2 cup chopped fresh apple
- 1/2 cup chopped walnuts (optional)
- 2 tablespoons brown sugar (for topping)
Instructions
To begin, preheat the oven to 350 degrees Fahrenheit and grease a 9 by 5 inch loaf pan. In a large bowl, mix together the flour, baking powder, baking soda, cinnamon, and salt. In a separate bowl, combine the cranberry apple juice, melted butter, and white and brown sugars. Beat the eggs into the mixture and then add the dry ingredients and mix until everything is fully combined. Fold in the cranberries, apples, and walnuts and pour the batter into the greased loaf pan. Sprinkle the top of the batter with the remaining two tablespoons of brown sugar and place the pan in the preheated oven. Bake for 45 minutes or until a toothpick inserted into the center of the bread comes out clean. Once the bread is done baking, allow it to cool for 10 minutes before removing it from the pan and slicing it. Enjoy the bread warm or cold, with a pat of butter, or as is.Nutrition
