- 3 ripe bananas, mashed
- 1/3 cup melted butter
- 1 cup sugar
- 1 egg, beaten
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- Pinch of salt
- 1 1/2 cups of all-purpose flour
- 1/2 cup chopped walnuts (optional)
Instructions
Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
In a large bowl, mix together the mashed bananas, melted butter, sugar, egg and vanilla. In a separate bowl, whisk together the baking soda, salt and flour. Add the flour mixture to the wet ingredients and mix until just combined. Fold in the walnuts (if using). Pour the batter into the prepared loaf pan.
Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
