  • Candy melts, for dipping

Instructions

Preheat the oven to 350°F (175°C). Grease and flour a 9x13 inch pan and set aside.

In a medium bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.

In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, mixing after each addition. Add the vanilla extract and mix until combined. Add the dry ingredients to the wet ingredients and mix until just combined. Add the buttermilk and mix until just combined.

Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely before continuing.

Once the cake is cooled, crumble it into a large bowl. Add the chocolate chips and mix until everything is evenly combined. Roll the mixture into 1 inch balls and place on a parchment lined baking sheet. Place the baking sheet in the freezer for 30 minutes.

Once the cake pops are chilled, melt the candy melts according to the package instructions. Dip the lollipop sticks into the melted candy and insert into the cake pops.
