- 1 cup all-purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon salt
- ½ teaspoon ground nutmeg
- ½ teaspoon ground cinnamon
- 2 large eggs
- 1 cup white sugar
- 1 teaspoon vanilla extract
- ½ cup vegetable oil
- ½ cup orange juice
- 1 cup dried fruit (such as raisins, cranberries, or cherries)
- 1 cup chopped fresh fruit (such as apples, pears, or peaches)
- ¼ cup slivered almonds or other nuts (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
- In a medium bowl, sift together the flour, baking powder, salt, nutmeg, and cinnamon.
- In a large bowl, beat the eggs, sugar, and vanilla extract until light and fluffy.
- Slowly beat in the vegetable oil and orange juice.
- Fold in the flour mixture until just combined.
- Fold in the dried fruit and fresh fruit.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
- Serve with a dollop of whipped cream or a dusting of powdered sugar.
