Fortnum & Mason's Fruit Cake: A Deliciously Classic Recipe

Fruit cake is a classic dessert that is loved by many. It is often made for special occasions such as weddings or Christmas time. This particular recipe is from the famous London store, Fortnum & Mason, and it is sure to be a hit with family and friends.

Ingredients:

  • 225g (8oz) sultanas
  • 225g (8oz) currants
  • 225g (8oz) raisins
  • 225g (8oz) glacé cherries, halved
  • 225g (8oz) butter, softened
  • 225g (8oz) light muscovado sugar
  • 4 medium eggs
  • 225g (8oz) self-raising flour
  • 2 tablespoons brandy
  • 1 teaspoon ground mixed spice
  • Grated zest of 1 lemon

Instructions:

Preheat the oven to 140°C (275°F), Gas Mark 1.

Grease a 20cm (8in) round cake tin and line the bottom with a circle of greaseproof paper.

Put the sultanas, currants, raisins and cherries into a bowl and mix together. Place the bowl to one side.

In a separate bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time and beat until fully incorporated. Add the brandy and stir until combined.

Add the flour and mixed spice to the butter and sugar mixture and mix together until combined. Add the bowl of dried fruit and mix together until everything is evenly distributed.

Spoon the mixture into the prepared tin and spread out evenly. Level the top with a spatula and sprinkle with the grated lemon zest.

Bake in the preheated oven for 2 hours 15 minutes. After this time, reduce the oven temperature to 120°C (250°F), Gas Mark ½, and bake for a further 1 hour 15 minutes. The cake is ready when a skewer inserted into the middle comes out clean.

When the cake is cooked, leave to cool in the tin for 15 minutes before turning out onto a wire rack and leaving to cool completely.
