Ingredients
- 2 large eggs
- 2 slices of cheddar cheese
- 1/4 cup of diced bell peppers
- 1/4 cup of diced onions
- 1 large whole wheat tortilla
- 1/4 cup of refried beans
- 1/4 cup of salsa
Instructions
- Heat a large skillet over medium heat.
- Add the bell peppers and onions to the skillet and cook until they are softened, about 5 minutes.
- Add the eggs to the skillet and scramble until they are cooked through, about 5 minutes.
- Remove the eggs and vegetables from the skillet and set aside.
- Place the tortilla in the skillet and cook until it is lightly browned and crispy, about 1 minute per side.
- Spread the refried beans on one side of the tortilla.
- Top the refried beans with the eggs and vegetables.
- Top with the cheese and salsa.
- Fold the tortilla in half to make a burrito.
- Serve immediately.
