Ingredients
- 1 cup butter, softened
- 1/2 cup sugar
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1/2 cup cocoa powder
- 1/2 teaspoon ground espresso
- 1/4 teaspoon salt
Instructions
- Preheat oven to 350°F. Line two baking sheets with parchment paper.
- In the bowl of an electric mixer, cream together the butter, sugar, and vanilla until light and fluffy.
- In a separate bowl, whisk together the flour, cocoa powder, espresso, and salt.
- With the mixer on low, slowly add the dry ingredients to the wet ingredients and mix until just combined.
- Shape the dough into 1-inch balls and place them on the prepared baking sheets, about 2 inches apart.
- Bake for 8-10 minutes, or until the cookies are just set. They will still be soft.
- Allow to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
