Ingredients
These delicious chocolate dipped shortbread cookies are easy to make and require a few simple ingredients:
- 1½ cups all-purpose flour
- ¼ teaspoon salt
- ½ cup (1 stick) unsalted butter, at room temperature
- ¾ cup confectioners' sugar, sifted
- 1 teaspoon vanilla extract
- 1 ½ cups semi-sweet chocolate chips
- 2 tablespoons shortening or vegetable oil
Instructions
Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper.
In a medium bowl, whisk together the flour and salt. In a separate bowl, cream the butter and confectioners' sugar until light and fluffy. Beat in the vanilla extract. Gradually add the flour mixture to the butter mixture and mix until just combined.
Roll the dough into 1-inch balls and place them on the prepared baking sheets. Using a fork, press down and flatten each cookie. Bake for 15-18 minutes or until the edges are golden brown. Let cool completely.
In a microwave-safe bowl, combine the chocolate chips and shortening or oil. Heat in the microwave in 30-second increments, stirring after each increment, until the chocolate is melted and smooth. Dip each cooled cookie halfway into the chocolate and let any excess chocolate drip off. Place on a parchment-lined baking sheet and let set for about 10 minutes.
