Instructions
To make the cupcakes:
- Preheat the oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, beat the oil, sugar, eggs, vanilla, and yogurt until smooth.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Fill the cupcake liners about two-thirds full and bake for 18-20 minutes, until a toothpick inserted into the center comes out clean.
- Let cool completely before frosting.
To make the frosting:
- In a medium bowl, beat the confectioners’ sugar, butter, cream, and vanilla until light and fluffy.
- If the frosting is too thick, add a little more cream, a teaspoon at a time, until desired consistency is reached.
- Fill a pastry bag fitted with a star tip and pipe the frosting onto the cooled cupcakes in a swirl.
To assemble the bouquet:
- Cut a piece of floral foam to fit into the bottom of a vase.
- Soak the foam in water for a few minutes, then place it in the vase.
- Cut pieces of tissue paper about the size of the cupcakes and arrange them around the foam.
- Cut the stems of the flowers so that they are about 3-4 inches long.
- Insert the stems into the foam, making sure the flowers are evenly spaced.
- Carefully insert the cupcakes between the flowers, pushing them down slightly into the foam.
- Wrap the stems of the flowers and the cupcakes together with green floral tape.
- Cut a piece of floral wire and shape it into a hook. Insert the hook into the foam and hang the bouquet over the vase for an extra special touch.
