Ingredients

To make your own Barbacoa Breakfast Burrito, you will need: 2 tablespoons extra virgin olive oil, 1 cup of finely diced onion, 1 tablespoon minced garlic, 1 teaspoon ground cumin, 1 teaspoon ground chili powder, 1/2 teaspoon smoked paprika, 1/2 teaspoon ground coriander, 1/4 teaspoon cayenne pepper, 1/2 teaspoon oregano, 1/4 teaspoon ground cinnamon, 2 tablespoons tomato paste, 1/4 cup of water, 2 cups cooked, shredded barbacoa beef, 8 eggs, 1/4 cup of milk, salt, and pepper to taste, 2 cups of cooked white rice, 1/4 cup of chopped fresh cilantro, 1/4 cup of diced green onions, 4-6 large flour tortillas, and 1/2 cup of your favorite salsa.

Instructions

In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and sauté for 3-4 minutes or until the onion is softened and golden. Add the cumin, chili powder, smoked paprika, coriander, cayenne pepper, oregano, and cinnamon. Stir to combine and cook for 1 minute. Add the tomato paste and water and stir to combine. Cook for 2-3 minutes, stirring occasionally. Add the cooked, shredded barbacoa beef and stir to combine. Cook for another 2-3 minutes. Remove from the heat and set aside.

In a medium bowl, whisk together the eggs and milk. Season with salt and pepper to taste. Heat a large non-stick skillet over medium heat and spray with cooking spray. Pour in the egg mixture and cook until scrambled and cooked through. Remove from the heat and set aside.

To assemble the burritos, heat a large non-stick skillet over medium heat. Place a large flour tortilla in the skillet and spread 1/4 cup of cooked white rice over the tortilla. Top with 1/4 cup of the barbacoa beef mixture, 1/4 cup of scrambled eggs, 1 tablespoon of chopped fresh cilantro, 1 tablespoon of diced green onions, and 1 tablespoon of your favorite salsa. Fold the sides of the tortilla in then fold the top and bottom of the tortilla up to completely enclose the filling. Cook until the tortilla is lightly browned and crispy on each side, flipping once. Repeat with the remaining tortillas and filling.
