Ingredients
- 1 cup almond flour
- 2 ripe bananas
- 2 eggs
- 2 tablespoons coconut oil
- 1 teaspoon baking powder
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon salt
- Optional: 1/4 cup chopped walnuts or sliced almonds
Instructions
1. Start by mashing the bananas in a large bowl. Use a fork to mash the bananas until they are mostly smooth. You can also use a blender for this step, but mashing with a fork is usually easier.
2. Add the almond flour, eggs, coconut oil, baking powder, cinnamon, and salt to the mashed bananas. Mix everything together until a thick batter forms. If desired, you can also add in walnuts or sliced almonds.
3. Heat a large non-stick skillet over medium heat. Grease the skillet with a little bit of coconut oil or butter. Drop the batter onto the skillet in circles, about 1/4 cup of batter for each pancake. Cook for about 2-3 minutes, or until the edges of the pancakes start to look golden brown.
4. Flip the pancakes over and cook on the other side for another 2-3 minutes. Repeat with the remaining batter. Serve the pancakes warm with a drizzle of maple syrup.
